CREAMY BAKED DRY CURD COTTAGE CHEESE farmer's cheese is baked in the oven with honey to create a quick dessert item or breakfast companion.

This is a very simple and perhaps surprisingly delicious dessert or treat for any time of the day. I can eat it freshly baked out the oven with nothing else, but it’s also great when you throw in some raisins (you could even try baking it with said raisins in the dish), or else having it alongside your yogurt.

I would describe it almost like the filling inside cheese blintzes, or cheesecake-ish, but not quite. If you blend everything together in the food processor, though, as opposed to by hand (which is how I typically do it), you will create an even smoother and even texture, and thus make it resemble cheesecake even more. I’ll need to try that myself next time! In the meantime, here’s the recipe, which makes enough for one serving. I tend to eat half of it though and then store the remainder in the fridge, which I will then gobble up cold an hour later, because I have no will power apparently.

INGREDIENTS

  • 1 and 1/2 cup of DCCC (farmer’s cheese)
  • 1 egg
  • 1 tsp of pure vanilla extract
  • 1 tsp of lemon zest

HOW TO

  1. mix all the ingredients well in a small bowl, and pour into oven-safe dishware.
  2. bake at 350 for 20 mins – 25 mins, until the top is golden brown and bubbling. allow to cool slightly but enjoy this treat warm out of the oven!
