start placing your shredded apple, honey and coconut oil or butter in a medium size saucepan, and heat over medium heat for 10 mins or so, until it begins to bubble. turn down the temperature to a simmer, and simmer for five more mins.
toss your coconut flakes in the cinnamon, nutmeg and salt in a large bowl.
once your apple-honey mixture is ready, remove from heat and place in bowl with coconut flakes- be aware it will be hot.
combine everything, mixing well until all the coconut flakes are well covered.
spread the coconut across a parchment paper-lined baking tray, and bake in a preheated oven at 330 for 20 minutes.
remove from oven, and flip/mix the coconut around on the tray, before returning to the oven and baking for another 10-15 minutes.
remove from heat and allow to cool. add in 1 cup of raisins if desired and mix around. store in an airtight glass jar.
enjoy these delicious coconut flakes as a dry snack, with yogurt, or with nut milk. works equally well as a smoothie topper!
