apple cinnamon (currant) muffins
these apple cinnamon muffins are made with coconut flour and applesauce, with the option to add-in currants or raisins for the perfect baked treat.

- 1/2 cup coconut four
- 1/4 cup applesauce
- 2 tbsp yogurt SCD legal
- 1/2 cup honey
- 1/2 cup coconut oil sub in grape seed oil, melted butter or ghee butter
- 5 eggs
- 1/2 tsp baking soda
- 1 tsp apple cider vinegar
- 1 tbsp cinnamon
- 1/8 tsp ginger
- 1 apple, peeled and diced into small pieces
- 1/2 cup currants or raisins optional
in a medium to large bowl, begin with mixing the dry ingredients together, starting with the coconut flour, baking soda, and spices.
then add in the wet ingredients, except for the peeled and diced apple, until well combined, ending with the eggs. once the eggs are well mixed in, fold in the chunks of apples and currants or raisins if desired.
pour the batter into parchment paper-cup lined baking trays, approximately 3/4 of the way full.
bake in a preheated oven at 350 for 25 minutes. remove from oven and allow to cool. these muffins store well in fridge & freezer, and can be reheated slightly in the oven for best results when enjoying!
