apple shortcake

this grain free, gluten free apple "shortcake" makes the perfect birthday cake for anyone who is obsessed with apples.

Ingredients

vanilla cakes

  • 1 cup coconut flour
  • 1 cup honey
  • 1 cup coconut oil, melted
  • 1 tbsp pure vanilla extract
  • 1/2 tsp baking soda
  • 8 eggs

apple filling

  • 6 apples, peeled and diced
  • 2 tbsp avocado oil sub coconut oil
  • 1 + 1/2 tsp cinnamon
  • 1/2  tsp nutmeg
  • 3 tbsp honey
  • 1/4  cup water

meringue frosting

  • 2 egg whites
  • 1/4  cup honey
  • 2-3 tbsp apple pie filling

Instructions

vanilla cakes

  • in a large bowl, mix your wet ingredients.
  • add your dry ingredients, and mix well.
  • pour the batter into two round cake tins, approx 8 inches each, lined with parchment paper (I cut it into a circle to fit the tin).
  • bake at 350 for 30 mins. remove from oven and allow to cool completely (you could leave them in the fridge to get them cold).

apple pie filling

  • peel and dice all apples into small pieces.
  • mix the apples in with the spices and honey.
  • add the avocado oil or coconut oil to a cast iron skillet over medium heat.
  • add the apples mixture into the skillet once hot, and sautee for 25 minutes at medium heat.
  • lower heat and add 1/4 cup of water, stirring, and allow to simmer for 10 more minutes, remove from heat and allow to cool.

meringue frosting

  • once you're ready to prepare your cake, then make your frosting.
  • heat the honey in a saucepan, stirring constantly. once it comes to a boil, lower the heat and allow to simmer for 6-10 minutes.
  • while the honey heats, whip your egg whites using a hand mixer or stand mixer, forming stiff peaks.
  • once the stiff peaks have formed with your egg whites, slowly drizzle in your hot honey and continue to mix, allowing it to become fluffy. 
  • allow to cool to room temperature before you fold in to the meringue frosting two to three tablespoons of your apple pie filling.

put your apple shortcake all together

  • once you have everything prepared, place one of the vanilla cakes on a cake stand, and cover it in a layer of the apple pie filling.
  • from there, add in a layer of the apple pie meringue frosting, and place the second cake atop it.
  • finally, use up the remaining meringue to coat the top layer of the cake, and for decorative purposes, place the remaining apple pie filling around the cake in a circular fashion.
