banana almond butter chocolate chip cookies

these cookies are made with almond butter and banana and loaded with refined sugar free chocolate chips, for a sweet treat that's still on the healthier side!

Ingredients

  • 1 cup almond butter
  • 3 tbsp coconut flour
  • 1/4 cup honey
  • 1 mashed banana
  • 1 tsp pure vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup refined sugar free chocolate chips i used the brand Just Date for this recipe
  • 1 egg

Instructions

  • start by mashing your banana with the egg in a medium sized bowl, then add your vanilla extract, honey and almond butter, combining well.
  • add the baking soda, salt and coconut flour and mix again until everything is well combined.
  • fold in the chocolate chips.
  • set in the bowl in the fridge or freezer for at least 10 minutes to harden the dough, it will make it easier to form your cookies after.
  • once the dough is cold, prepare a baking sheet lined with parchment paper and preheat the oven to 350.
  • form the dough into balls, approx two tbsp per cookie, and place the ball on the parchment paper. flatten each ball with the palm of your hand.
  • bake at 350 for 10-12 minutes.
  • allow to cool and enjoy! store in fridge or freezer.
