start by mashing your banana with the egg in a medium sized bowl, then add your vanilla extract, honey and almond butter, combining well.
add the baking soda, salt and coconut flour and mix again until everything is well combined.
fold in the chocolate chips.
set in the bowl in the fridge or freezer for at least 10 minutes to harden the dough, it will make it easier to form your cookies after.
once the dough is cold, prepare a baking sheet lined with parchment paper and preheat the oven to 350.
form the dough into balls, approx two tbsp per cookie, and place the ball on the parchment paper. flatten each ball with the palm of your hand.
bake at 350 for 10-12 minutes.
allow to cool and enjoy! store in fridge or freezer.
