blueberry cheesecake popsicles (scd diet, refined sugar free)

these popsicles are made with blueberries, yogurt, and dry curd cottage cheese for the perfect cheesecake-esque texture and flavour, a delicious summer treat.

Ingredients

  • 1 + ½ cups frozen or fresh blueberries
  • ½ cup yogurt
  • ½ cup dry curd cottage cheese try swapping cottage cheese
  • 3-4 tbsp honey depending on desired sweetness
  • 1 tsp pure vanilla extract

Instructions

  • throw all your ingredients in a food processor or blender, and blend until well combined.
  • pour your mixture into popsicle molds (i use these ones from amazon), add your popsicle sticks, and place in freezer for several hours (until properly frozen).
