cantaloupe popsicles (refined sugar free, dairy free, scd diet)
cantaloupe pops are a fun treat any time of the year, but they are especially refreshing in the summer when you have a ripe cantaloupe lying around. a simple recipe, the hardest part is waiting for them to freeze!

- 3 cups chopped cantaloupe
- 1 can coconut milk
- 1 + 1/2 tsp pure vanilla extract
- 4-5 tbsp honey, depending on desired sweetness
once your cantaloupe is chopped, place all your ingredients in the food processor and blend until smooth- you may still have some cantaloupe pieces which is perfectly acceptable!
pour your cantaloupe mixture into your popsicle molds. add your popsicle sticks, and cover, placing safely in the freezer until completely frozen.
once frozen, remove your popsicles from the molds and store as you please-- my popsicle molds (link above) came with little plastic baggies and ties to use, alternately, you can use individual ziploc bags. enjoy!
