cantaloupe popsicles (refined sugar free, dairy free, scd diet)

cantaloupe pops are a fun treat any time of the year, but they are especially refreshing in the summer when you have a ripe cantaloupe lying around. a simple recipe, the hardest part is waiting for them to freeze!

Ingredients

  • 3 cups chopped cantaloupe
  • 1 can coconut milk
  • 1 + 1/2 tsp pure vanilla extract
  • 4-5 tbsp honey, depending on desired sweetness

Instructions

  • once your cantaloupe is chopped, place all your ingredients in the food processor and blend until smooth- you may still have some cantaloupe pieces which is perfectly acceptable!
  • pour your cantaloupe mixture into your popsicle molds. add your popsicle sticks, and cover, placing safely in the freezer until completely frozen.
  • once frozen, remove your popsicles from the molds and store as you please-- my popsicle molds (link above) came with little plastic baggies and ties to use, alternately, you can use individual ziploc bags. enjoy!
