cherry pistachio crumble cookies

these almond flour cookies are littered with fresh cherries and topped with a pistachio cherry crumble.

Ingredients

  • 2 + 1/2 cups almond flour
  • 1/2 cup fresh cherries, pitted and chopped
  • 1/3 cup honey
  • 3 tbsp coconut oil softened or melted
  • 1 tbsp pure vanilla extract
  • 1/2 tsp baking soda
  • 1 egg

cherry pistachio crumble

  • 1/2 cup roasted pistachios, chopped finely
  • 1/4 cup fresh cherries, pitted and chopped finely
  • 1 tbsp honey

Instructions

  • start by mixing your dry ingredients in a medium or large bowl
  • add in the oil, honey, and vanilla extract and roughly combine.
  • add in the egg and mix until well combined.
  • finally, fold in your cherries and set aside while you prepare the crumble topping.

  • combine the chopped pistachios and chopped cherries with the honey in a small bowl.
  • prepare your cookies by taking a big spoon of batter and flattening it on a parchment paper-lined baking tray.
  • once your tray is filled with cookies, top each cookie with some of the crumble mixture and press it down into the top of the cookie.
  • bake the cookies in a preheated oven at 350 for 14-15 minutes until golden.
  • remove from heat and allow to cool before lifting them off the tray as they will be soft and this will allow them to firm up.
