cherry pistachio crumble cookies
these almond flour cookies are littered with fresh cherries and topped with a pistachio cherry crumble.

- 2 + 1/2 cups almond flour
- 1/2 cup fresh cherries, pitted and chopped
- 1/3 cup honey
- 3 tbsp coconut oil softened or melted
- 1 tbsp pure vanilla extract
- 1/2 tsp baking soda
- 1 egg
cherry pistachio crumble
- 1/2 cup roasted pistachios, chopped finely
- 1/4 cup fresh cherries, pitted and chopped finely
- 1 tbsp honey

start by mixing your dry ingredients in a medium or large bowl
add in the oil, honey, and vanilla extract and roughly combine.
add in the egg and mix until well combined.
finally, fold in your cherries and set aside while you prepare the crumble topping.

combine the chopped pistachios and chopped cherries with the honey in a small bowl.
prepare your cookies by taking a big spoon of batter and flattening it on a parchment paper-lined baking tray.
once your tray is filled with cookies, top each cookie with some of the crumble mixture and press it down into the top of the cookie.
bake the cookies in a preheated oven at 350 for 14-15 minutes until golden.
remove from heat and allow to cool before lifting them off the tray as they will be soft and this will allow them to firm up.
