chocolate covered peanut butter ice cream bars

these ice cream bars are made with a vanilla peanut butter base, loaded with roasted peanuts, dipped in chocolate and topped with more peanuts.

Ingredients

  • 1 can of coconut milk (400 ml can) refrigerated overnight, you will only use the solid portion on top
  • 1/2  cup peanut butter
  • 1 tsp pure vanilla extract
  • 3 tbsp honey
  • 1/2  cup roasted peanuts, chopped or more as desired
  • 3/4 cup approx of dark chocolate chips (refined sugar free) melted i used hu dark chocolate gems
  • 1 tbsp melted coconut oil

Instructions

  • remove the solid portion from the coconut milk and place in blender or food processor. save the liquid portion for smoothies or other recipes.
  • add in the peanut butter, vanilla and honey, and blend until smooth.
  • pour the ice cream portion into your popsicle molds (i used this kind of mold from amazon), and add roasted peanuts to each, as much as desired, pressing down into the popsicles if needed.
  • place in the freezer for a few hours.
  • once frozen solid, warm your chocolate chips in the microwave until softened, mix in the liquid coconut oil.
  • remove the ice cream bars and dip into your chocolate. as you dip the front of the popsicle, place your additional roasted peanuts (before the chocolate hardens).
  • place each on parchment paper lined plate or baking sheet, and return to the freezer for 20 minutes or so until solid. enjoy!
