grain free waffles with coconut flour

waffles have finally returned to my life and i couldn't be more excited to share my recipe with you. they're perfect to enjoy fresh, or else freezing and popping into the toaster oven whenever you want.

Ingredients

  • 1/4 cup coconut flour
  • 1/4 cup coconut milk sub in water or another nut-based milk
  • 4 eggs
  • 3 tbsp honey
  • 2 tbsp coconut oil, melted plus more for the waffle maker
  • 2 tbsp cold water
  • 1/2 tsp apple cider vinegar
  • 1/4 tsp pure almond extract
  • 1/4 tsp baking soda

Instructions

  • heat up your waffle maker. for this recipe, i did use the dash mini waffle maker which makes waffles that are essentially the same size as an eggo. if you are using a larger/more traditionally-sized waffle maker, keep in mind you will end up with less waffles, so you could always double this recipe as needed.
  • in a large bowl, whisk your dry ingredients together, before adding in the coconut milk, honey, coconut oil and almond extract. combine well.
  • add apple cider vinegar, cold water, and combine, before adding in the eggs. mix well, so there are no clumps.
  • prepare your waffle maker by greasing it with coconut oil (simply put some coconut oil on a paper towel and spread it around the waffle maker grills).
  • once hot, pour 1/4 cup of batter into the mini waffle maker, so that you do not see the black grills. close and allow to cook for 3-4 minutes.
  • once it's browned to your liking, carefully remove and set aside. you can place your waffles on a baking tray and keep them warm in the oven (on low) while you prepare the rest, if you are serving them fresh.
  • repeat until all batter is complete.
  • serve fresh with eggs, honey, and fresh fruit. or else, store these in between layers of parchment paper in the freezer and pop one out whenever you want an "eggo."!
