in a mini muffin pan, place mini muffin parchment paper cups.
take your medjool dates and slice each in half as cleanly as possible, removing the pit.
open up one half of a medjool date and flatten it a bit before placing it inside the parchment paper cup, rounding out the bottom of the cup as much as possible. repeat with all 6 medjool dates (12 halves total).
add a spoonful of peanut butter to the top of each medjool date.
add chopped roasted peanuts to the top of each date, pressing down on each. feel free to add as much as you like.
you can melt your chocolate chips in a microwave-safe bowl at 30-40 second intervals, stirring in between, until fully melted.
spoon your melted chocolate on top of each cup, allowing it to cover the entire top.
top off each peanut butter cup with some more roasted peanuts.
place in freezer, allow to freeze for at least 2 hours. store in freezer and serve frozen/cold!
