refined sugar free homemade chocolate peanut butter cups

your new favorite replacement for a Reese's peanut butter cup.

Ingredients

  • 6 medjool dates
  • 1/2 cup + 2 tbsp chopped roasted peanuts
  • 1/2 cup + 1 tbsp refined sugar free dark chocolate chips, melted i use hu kitchen dark chocolate gems
  • 1/4 cup peanut butter (give or take)

Instructions

  • in a mini muffin pan, place mini muffin parchment paper cups.
  • take your medjool dates and slice each in half as cleanly as possible, removing the pit.
  • open up one half of a medjool date and flatten it a bit before placing it inside the parchment paper cup, rounding out the bottom of the cup as much as possible. repeat with all 6 medjool dates (12 halves total).
  • add a spoonful of peanut butter to the top of each medjool date.
  • add chopped roasted peanuts to the top of each date, pressing down on each. feel free to add as much as you like.
  • you can melt your chocolate chips in a microwave-safe bowl at 30-40 second intervals, stirring in between, until fully melted. 
  • spoon your melted chocolate on top of each cup, allowing it to cover the entire top.
  • top off each peanut butter cup with some more roasted peanuts.
  • place in freezer, allow to freeze for at least 2 hours. store in freezer and serve frozen/cold!
