spinach feta quiche (with ground cashew, grain free crust)

a delicious an easy to make grain free quiche filled with spinach and pockets of feta cheese.

Ingredients

filling

  • 1/2 cup chopped spinach
  • 1/2 cup finely chopped red onion
  • 1 garlic clove minced
  • 2 tbsp extra virgin olive oil
  • 4 eggs
  • 1/2 cup feta cheese, chopped
  • 1/4 tsp dill
  • 1 tsp fresh parsley, chopped
  • salt and pepper to taste

crust

  • 1 cup cashews, ground up pulse in food processor until crumbly texture
  • 1 egg
  • 1 tbsp coconut oil
  • 1 tsp fresh oregano, finely chopped

Instructions

crust

  • in a bowl, start by preparing your quiche crust. mix all the crust ingredients together and combine well.
  • firmly pat down the crust into a pie dish lined with parchment paper, and bring it up along the edges slightly, until it covers the dish completely.
  • bake the crust in a preheated oven at 350 for 12-15 mins, until lightly golden. if the crust poufs up a bit, it's fine, you can gently press down when still hot.

filling

  • while the crust is baking, prepare the filling. in a large bowl, add all your ingredients, except for the feta and spinach, and combine well.
  • once the egg mixture is well combined, add in the chopped spinach and feta and gently fold together
  • pour the mixture into the pre-baked pie crust, and return to the quiche to the oven to bake for another 30-35 minutes.
  • serve warm or cold. also freezes very well!
