cacao butter cookies
cookies made with cacao (cocoa) butter, resulting in a crisp yet soft healthy-ish treat that has a chocolate-y scent to it.

- 1 cup almond flour
- 3 tbsp coconut flour
- 5 tbsp cacao butter melted
- 1/4 cup honey
- 1/2 tsp pure vanilla extract
- 1/4 tsp baking soda
- 1 egg, whisked
- pinch of salt
in a medium sized bowl, mix the dry ingredients.
add the melted cocoa butter, honey, vanilla extract and whisked egg.
you can make cookie cut-outs using different cookie cutter shapes with these if you'd like - either way, you should let the batter refrigerate until cold. you’ll be able to roll the batter it into a ball and flatten it, and then use cookie cutters if you want. you can also just take two tablespoons of the batter and flatten it directly on a parchment paper-lined baking tray for circular shaped cookies. it will be easier to shape into cookies when the batter is cold.
bake at 350 for 9-10 mins or so. they should be golden brown or as brown as you like. best enjoyed cold, out of the freezer (in my personal opinion!). store in fridge or freezer.
