cinnamon raisin granola

a brand new granola recipe with cinnamon undertones and loaded with raisins.

Ingredients

  • 1 cup almonds
  • 1 cup unsweetened finely shredded coconut
  • 1/2 cup walnuts
  • 1/2 cup cashews
  • 1 tsp pure vanilla extract
  • 1 egg white
  • 3 tsp cinnamon
  • 1/4 cup honey
  • 2 tbsp coconut oil or grapeseed oil melted
  • 1 cup raisins

Instructions

  • preheat the oven to 350.
  • chop up all your nuts into small chunks. toss them in a bowl, and add the finely-shredded coconut. mix together.
  • toss everything in cinnamon.
  • stir in the oil, honey, vanilla extract and egg white.
  • spread onto a parchment paper-lined baking sheet, and flatten with a spatula.
  • bake in the oven at 350 for 20 mins - keep an eye to avoid getting overly brown.
  • remove from the oven and allow to cool, before you break it up into pieces and mix with the cup of raisins.
  • store in a mason jar in the fridge or freezer.
