cinnamon raisin granola
a brand new granola recipe with cinnamon undertones and loaded with raisins.

- 1 cup almonds
- 1 cup unsweetened finely shredded coconut
- 1/2 cup walnuts
- 1/2 cup cashews
- 1 tsp pure vanilla extract
- 1 egg white
- 3 tsp cinnamon
- 1/4 cup honey
- 2 tbsp coconut oil or grapeseed oil melted
- 1 cup raisins
preheat the oven to 350.
chop up all your nuts into small chunks. toss them in a bowl, and add the finely-shredded coconut. mix together.
toss everything in cinnamon.
stir in the oil, honey, vanilla extract and egg white.
spread onto a parchment paper-lined baking sheet, and flatten with a spatula.
bake in the oven at 350 for 20 mins - keep an eye to avoid getting overly brown.
remove from the oven and allow to cool, before you break it up into pieces and mix with the cup of raisins.
store in a mason jar in the fridge or freezer.
