in a food processor, add your dry ingredients and blend.
add in the coconut oil, honey, vanilla and almond extract and blend, before finally adding in the eggs. combine well.
remove the blade from the food processor, clean off any excess batter, and fold in the chopped strawberries. allow the batter to sit for five minutes.
place parchment paper cups in a muffin tray and prepare your muffins by spooning in the batter until 3/4 full approx.
top each muffin with a teaspoon or so of clementine curd, and then add a sliced strawberry on top of that, creating a heart shape cut out if desired. to do this, i sliced a strawberry thinly horizontally and then used a knife to create indents that look like a heart (or heart-esque, lol).
bake the muffins in a preheated oven at 350 for 30 mins or so. remove from heat and allow to cool completely. recommended to serve warm with extra clementine curd, but you can also freeze these and eat them cold!
