The spirit of Valentine’s Day is upon us, and thus, I’ve created a cute and appropriate dessert or breakfast/brunch item for the occasion, although, it’ll be versatile for any time you want to indulge in a fancy muffin and impress yourself/your grain free friends. Clementine curd and strawberry muffins have a coconut flour base, with fresh pieces of strawberries and homemade clementine curd (it is an extra step but you must prepare it ahead of time, also less work for you on the day-of– but definitely make the curd the day prior to when you plan on making these muffins). The strawberries and curd provide complimentary flavours, with the curd giving a bit of tartness to contrast the sweetness of the muffin.

The muffin is moist thanks to the pockets of curd, with a slightly vanilla undertone. They’re fantastic fresh and warm out of the oven (although do let them cool a bit too avoid a muffin falling apart-fiasco– it is coconut flour so it can be delicate, especially before they’ve cooled down), and they’re even better when you serve them with an extra dollop of fresh curd on the site. If you make my recipe for clementine curd, you only need a 1/3 cup for the muffins, so you’ll have some extra to simply eat by the spoonful out of the jar/serve with muffins (I recommend doing both).

These muffins may look and feel like summertime, and would certainly be appropriate in the warmer seasons, however they are a nice heart-warming pick-me-up for these colder months as well.

  • 3/4 cup coconut flour
  • 2 tbsp almond flour
  • 1/2 cup honey
  • 5 eggs
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract
  • 3/4 cup chopped strawberries, plus 2-3 extra strawberries for decorative purposes if desired
  • 1/3 cup clementine curd

  1. in a food processor, add your dry ingredients and blend.
  2. add in the coconut oil, honey, vanilla and almond extract and blend, before finally adding in the eggs. combine well.
  3. remove the blade from the food processor, clean off any excess batter, and fold in the chopped strawberries. allow the batter to sit for five minutes.
  4. place parchment paper cups in a muffin tray and prepare your muffins by spooning in the batter until 3/4 full approx.
  5. top each muffin with a teaspoon or so of clementine curd, and then add a sliced strawberry on top of that, creating a heart shape cut out if desired. to do this, i sliced a strawberry thinly horizontally and then used a knife to create indents that look like a heart (or heart-esque, lol).
  6. bake the muffins in a preheated oven at 350 for 30 mins or so. remove from heat and allow to cool completely.
