start by mixing your yogurt, vanilla extract and honey together in a medium-sized bowl.
prepare a baking sheet by lining it with parchment paper, and spreading your yogurt mixture out to the edges. it can be thicker if you prefer, in which case you'll want to spread it out less.
now, take your granola your sprinkle as much as desired across the yogurt. if you want a heavier amount of granola topping, err on the side of 2 cups.
place the baking sheet in the freezer to allow the yogurt bark to set for at least four hours until it's frozen solid - i left it overnight.
once it's frozen completely, remove the baking sheet from the freezer and carefully lift the yogurt bark off the parchment paper, breaking it into different shapes and sizes.
to store, place the pieces of yogurt bark in an airtight container, layered in between pieces of parchment paper so you can easily grab a piece out of the freezer without it sticking together. store in the freezer and snack away!
