this is the perfect easy treat for a hot summer’s day.
You may have seen yogurt bark across your IG feed, and this is my take on it! While just about any and everyone has been doing it, I’m going to cite Ali Jenkins of Stellandcobakes as the main inspo slash spark, because I saw her yogurt bark on my feed and decided it was time to hop on it. As someone on the SCD diet, homemade 24-hour fermented yogurt is one of my (our) pride and joys — it’s versatile not only to eat and replenish your probiotics and healthy gut bacteria, it’s also a necessary ingredient in many a grain free recipe. I mean it when I saw thank gawddddd we are allowed to eat (homemade 24-hour 😉 ) yogurt on the SCD diet. Not only that, it’s actually freaking delicious– of course it’s plain, but you can do your own add-ins such as jam and honey. Personally, I’m quite happy with eating it plain these days!
Nonetheless, for this special iteration of frozen yogurt bark, I did add some honey and vanilla extract to give it a sweeter taste and flavour. There’s room to omit the honey if that’s your preference, or add even more, if that’s your preference. You could even swirl in some homemade strawberry jam to the yogurt if that’s preference! That would be another level in frozen yogurt bark.
Apart from mixing your already-made yogurt (and if you’re not following then SCD diet, of course your yogurt does not need to be homemade– feel free to use store-bought, greek yogurt, coconut yogurt, whatever your heart desires), you’ll need to ensure you have a couple of cups of granola on hand.
I happened to have a half-eaten bag of my own brand of granola, Earth to Rose, on hand, so that’s what I loaded atop the frozen yogurt bark. Although to be accurate, it wasn’t frozen when I piled on the granola lol – we freeze after that.
That being said, choose whatever granola works for your diet – be it homemade or storebought. I would say to use roughly two cups, but you can use less or more depending on exactly how granola-y you want it. Once it’s frozen, it’s an amazing quick treat or snack any time of the day, and something you can keep stashed in your freezer all summer long.

frozen yogurt & granola bark: ingredients
- 1 + 1/2 cup plain yogurt
- 1 tsp pure vanilla extract
- 2-3 tbsp honey (depending on desired sweetness)
- 1-2 cups preferred grain free granola (I used Earth to Rose, of course!)
frozen yogurt & granola bark: how to
- start by mixing your yogurt, vanilla extract and honey together in a medium-sized bowl.
- prepare a baking sheet by lining it with parchment paper, and spreading your yogurt mixture out to the edges. it can be thicker if you prefer, in which case you’ll want to spread it out less.
- now, take your granola your sprinkle as much as desired across the yogurt. if you want a heavier amount of granola topping, err on the side of 2 cups.
- place the baking sheet in the freezer to allow the yogurt bark to set for at least four hours until it’s frozen solid – i left it overnight.
- once it’s frozen completely, remove the baking sheet from the freezer and carefully lift the yogurt bark off the parchment paper, breaking it into different shapes and sizes.
- to store, place the pieces of yogurt bark in an airtight container, layered in between pieces of parchment paper so you can easily grab a piece out of the freezer without it sticking together. store in the freezer and snack away!

Ingredients
