these cookies are made with almond butter and banana and loaded with refined sugar free chocolate chips, for a sweet treat that’s still on the healthier side!
These cookies are my latest obsession, if only the Just Date chocolate chips weren’t so expensive (but it’s amazing to have a refined sugar free chocolate chip option, beyond Hu Kitchen). If you want to make these SCD compliant, you could either omit the chocolate chips or swap them for raisins, which I often did when making strict SCD treats. Nowadays I will definitely enjoy my (refined sugar free) dark chocolate though.
That being said, these cookies are lightly banana and almond butter flavoured, and they’re the perfect bendy and chewy consistency. I like to keep them on the flatter side so they are not too thick of a cookie.

And who says you can’t eat chocolate for breakfast? Because I was definitely eating these cookies with my morning coffee, and then again with my afternoon coffee. And then again after dinner. Yeah, they’re really good. I also love how easy they are to throw together, the recipe calls for 9 ingredients total which includes things like salt, the chocolate chips (duh) and egg. So really, it’s like, 6 ingredients. Girl math.

banana almond butter chocolate chip cookies: ingredients
- 1 cup almond butter
- 3 tbsp coconut flour
- 1/4 cup honey
- 1 mashed banana
- 1 tsp pure vanilla extract
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup refined sugar free chocolate chips (I used the brand Just Date for this recipe)
- 1 egg

- start by mashing your banana with the egg in a medium sized bowl, then add your vanilla extract, honey and almond butter, combining well.
- add the baking soda, salt and coconut flour and mix again until everything is well combined.
- fold in the chocolate chips.
- set in the bowl in the fridge or freezer for at least 10 minutes to harden the dough, it will make it easier to form your cookies after.
- once the dough is cold, prepare a baking sheet lined with parchment paper and preheat the oven to 350.
- form the dough into balls, approx two tbsp per cookie, and place the ball on the parchment paper. flatten each ball with the palm of your hand.
- bake at 350 for 10-12 minutes.
- allow to cool and enjoy! store in fridge or freezer.
