these ice cream bars are made with a vanilla peanut butter base, loaded with roasted peanuts, dipped in chocolate and topped with more peanuts.

I’m back with another popsicle recipe, this time ice cream-style, and I could not be more excited with the result!! This is my first true ice cream (style) recipe on the site, but it definitely won’t be my last. I actually own the Kitchen Aid ice cream mixer attachment, and I seriously do not get enough use out of it although I do love it! But fear not, you do not need any sort of ice cream maker for this recipe, simply a blender or food processor.

These ice cream bars are inspired by two things (/people): the first being Ali of @stelleandcobakes on IG, whose ice cream snicker bars I made recently and fell in love with. The second little piece of inspo is Haagen Dazs ice cream bars, you know the kind that are creamy ice cream inside, with a chocolate shell on the outside, often times littered with nuts. That was exactly what I was going for when I made these. I haven’t had a legit Haagen Dazs ice cream bar in awhile, but I think these turned out pretty damn good!

Not only do these taste freaking delicious (be warned they are quite sweet though!), they also look luxurious. They look professional. They look like you bought them from a store. Or spent all day making them. Or something like that. But what’s more THEY ARE SUPER EASY TO MAKE. So you get to enjoy all that fancy-ness with none of the hard work. If you make these for guests/for dessert, any and all will be impressed at your skills. I promise. 

The ingredients are simple as well, relying on coconut milk and peanut butter for the base, with vanilla extract and honey as your add-ins (feel free to go lighter on the honey if you prefer things less sweet), and then you’re also going to need some dark chocolate, coconut oil and peanuts. That’s it. They come together relatively quickly apart from the whole waiting-for-them-to-freeze part of the recipe. It’s the worst part of making any sort of frozen dessert, but it’s necessary to, you know, have a… frozen dessert.

peanut butter chocolate covered ice cream bars: ingredients

  • 1 can of coconut milk (400 ml can) refrigerated overnight, you will only use the solid portion on top
  • 1/2  cup peanut butter
  • 1 tsp pure vanilla extract
  • 3 tbsp honey
  • 1/2  cup roasted peanuts, chopped or more as desired
  • 3/4 cup approx of dark chocolate chips (refined sugar free), melted i used hu dark chocolate gems
  • 1 tbsp melted coconut oil

  1. remove the solid portion from the coconut milk and place in blender or food processor. save the liquid portion for smoothies or other recipes.
  2. add in the peanut butter, vanilla and honey, and blend until smooth.
  3. pour the ice cream portion into your popsicle molds (i used this kind of mold from amazon), and add roasted peanuts to each, as much as desired, pressing down into the popsicles if needed.
  4. place in the freezer for a few hours.
  5. once frozen solid, warm your chocolate chips in the microwave until softened, mix in the liquid coconut oil.
  6. remove the ice cream bars and dip into your chocolate. as you dip the front of the popsicle, place your additional roasted peanuts (before the chocolate hardens).
  7. place each on parchment paper lined plate or baking sheet, and return to the freezer for 20 minutes or so until solid. enjoy!
