Time for a new grown-up cookie! One that is not too sweet, not too tart, and perfect to accompany your morning coffee whether it’s black or milky. These cookies are made with almond flour, and then packed with chopped fresh cherries and topped with slightly roasted bits of pistachios that are mixed with even more cherries. They are soft and a bit crumbly (surprise), and I call them a “grown-up cookie,” like my lemon tahini sesame seed cookies, because they are not super sweet and the flavour is probablyyyy not super-appealing to kids but they do look pretty and they do taste good! So there’s that.

These cookies are made with almond flour, sweetened lightly with honey and flavoured lightly as well with vanilla. The pistachios do take over a lot of the flavour, but in the best way possible. As with many of my recipes, these are quite easy to throw together, even with the preparation of the crumble on top. I’ve been storing a bunch of them in freezer and can confirm you can eat these cookies cold out of the freezer on a hot day!

- 2 + 1/2 cups almond flour
- 1/2 cup fresh cherries, pitted and chopped
- 1/3 cup honey
- 3 tbsp coconut oil softened or melted
- 1 tbsp pure vanilla extract
- 1/2 tsp baking soda
- 1 egg
cherry pistachio crumble
- 1/2 cup roasted pistachios, chopped finely
- 1/4 cup fresh cherries, pitted and chopped finely
- 1 tbsp honey
cherry pistachio crumble cookies: how to
cookies
- start by mixing your dry ingredients in a medium or large bowl.
- add in the oil, honey, and vanilla extract and roughly combine.
- add in the egg and mix until well combined.
- finally, fold in your cherries and set aside while you prepare the crumble topping.

- combine the chopped pistachios and chopped cherries with the honey in a small bowl.
- prepare your cookies by taking a big spoon of batter and flattening it on a parchment paper-lined baking tray.
- once your tray is filled with cookies, top each cookie with some of the crumble mixture and press it down into the top of the cookie.
- bake the cookies in a preheated oven at 350 for 14-15 minutes until golden.
- remove from heat and allow to cool before lifting them off the tray as they will be soft and this will allow them to firm up.
