a simple and sweet waffle recipe that uses banana and eggs, no flour.
Recently I did a bit of a diet “cleanse” where I went back to my SCD roots (shout out postpartum issues) — I did a bit of a modified intro diet, where I relied on simple foods like chicken soup, homemade jell-o, 24-hour probiotic-filled yogurt, eggs and bananas. When I first started the SCD diet several years ago, one of the first things I tried when it came to a “recipe” was a simple banana and egg pancake — just an extremely ripe banana and eggs whisked together. I decided to try that again, and it quickly evolved into this waffle recipe.
I made this recipe every day for a good week plus as I introduced other foods back into my diet (more quickly than if I were starting the SCD diet from scratch, mind you). As I made it every day, it did change, as I experimented with additions to it – what was once simply banana and eggs is now a six-ingredient recipe, but it is still one that is extremely simple and can be easily modified if you are still in the early stages of SCD and would like to omit an ingredient or two for whatever reason!
Even if you’re not SCD, or if you’re advanced SCD – this recipe is so good! It’s definitely becoming part of my usual breakfast rotation. I do have another waffle recipe on my site that calls for coconut flour, but I love that this option doesn’t call for any flours!
Instead, this recipe calls for one very ripe banana, three eggs, and a bit of a gelatin (I opt for Great Lakes) to form the base of the waffle and give it a bit of firmness. I would say these are the three essential ingredients to this recipe – the other three ingredients are water (no issues there for most people!), pure vanilla extract and baking soda. The vanilla and baking soda could be easily omitted if it would cause an issue.
Finally, when it comes to serving these waffles – my go-to add-ons are honey, almond butter or peanut butter, or yogurt. Not necessarily all three at once, but some variation. You can also top with baked fruit (I’ve done baked apples for example, so good) or fresh fruit like sliced bananas.

- once it’s all mashed up, whisk in your eggs.
- add the vanilla extract and water, combine well.
- add the baking soda and gelatin, and mix again.
- pour batter into a hot waffle maker, be sure to grease with coconut oil or butter first – i use the mini waffle maker by dash, however you will be able to make 3-4 traditional (large) waffles with this recipe as well.
- serve warm with toppings such as yogurt, peanut butter or almond butter, baked apples, honey or maple syrup!
