a deliciously simple grain free muffin made with coconut flour and pure vanilla extract, topped with strawberry jam, preferably homemade!

I know my last two new recipes have been muffins (double chocolate and zucchini olive oil chocolate chip to be specific) but guys, give me a break, I’m siowly getting back into it lol! And honestly I’m making what I want/need at the moment to motivate myself to stick to a grain free (sometimes gluten free) diet — and right now, that means yummy snacks/desserts, such as muffins.

This latest muffin recipe is a super easy creation that I made on a whim when I had no more frozen snackies or breakfast-y items that I could eat with an iced coffee. A muffin (or two) + iced coffee = how I start my day with an 8 week old baby! Efficient and easy.

These are a very basic coconut flour muffin recipe flavoured only with pure vanilla extract and a high quality honey, and then each are topped with a homemade strawberry jam. You could definitely make these with any other flavour of jam, it was just what I had on hand to add a little bit of something to them while still keeping things simple. I’ve made them twice already, and both my toddler and partner have been eating them too so that’s always a good sign!!

I not only love how minimal the ingredient list– if you bake grain free often, then you surely have all the ingredients require for these muffins on hand already– but how quickly they come together. I am a one-bowl recipe queeeeeen because who gawt time to get out two bowls (and then have to clean two bowls amirite???) So you can very easily throw all your ingredients from dry —> wet, ending with the eggs, in one large bowl and call it a day.

The hardest part about these muffins is probably having strawberry jam ready to go – if you don’t already have some sitting in the fridge, then you’ll have to make a batch. However it is still easy and foolproof, I throw any quantity of frozen strawberries (typically at least 2 cups) (and of course you can also use fresh!) in a pot, and a few tablespoons of honey, sometimes a squeeze of lemon juice if I’m feeling fancy, and let it simmer until it’s boiled down for approximately 25 minutes. Boom.

  • 1 cup coconut flour
  • 1 cup honey
  • 1/2 cup coconut oil, melted or softened completely
  • 1 tbsp pure vanilla extract
  • 1 tsp baking soda
  • 2 tsp apple cider vinegar

  1. in a large bowl, place your coconut flour and baking soda and mix together removing any clumps.
  2. add in your wet ingredients in order – honey, coconut oil, vanilla extract and apple cider vinegar. combine.
  3. finally, add your eggs and combine well. let sit for 5 minutes while you prepare your muffin tray.
  4. prepare your muffin tray with muffin cups and fill each muffin almost to the top.
  5. place a large 1/2 tsp or a bit more (as your heart desires!) on top of each muffin.
  6. bake in a preheated oven at 350 for 30 minutes. remove from oven and allow to cool.
