I said there would be more pistachio recipes coming your way and I did not lie!!! Following my cherry pistachio crumble cookies I decided to put my big bag of pistachios to work by making this addictive sweet and salty pistachio pecan granola. the sweetness comes from honey, of course, and the saltiness comes from…salt. Surprise!

I store my granola in a big glass mason jar in the fridge and literally every time I open the fridge I have to sneak (/take, I’m not hiding from nodbody!) a bite. And I open the fridge a lot. Something I am apparently passing on to my eldest daughter who now has the habit of pointing to the fridge and saying “I want something“– what does she want? “something,” she repeats before forcing me to open the fridge so she can simply take a peak around.

Anyways, if you are a frequent visitor of grainfreee.com or follow me on IG for any period of time it should be fairly well known that I am a Granola Queen. I love granola. I love making granola (it’s so fricking easy!) and I love eating granola (it’s so versatile!). This remains true for my latest granola creation. I opted to keep it simple, crunchy and crispy without the addition of dried fruits, however, you can always throw some raisins in the mix if you prefer– I tend to add raisins to my granola once the granola is baked, just toss in as many as you’d like.

Granola is my favorite on-the-go snack or add it to your yogurt bowl in the morning, or even eat it like cereal with almond or cashew milk! This one makes really big clusters thanks to the egg white, however, you can crumble it up smaller if you prefer.

sweet & salty pistachio pecan granola: ingredients

  • 1 cup raw shelled pistachios
  • 1 cup raw pecans
  • 1/2 cup raw almonds
  • 1/2 cup raw walnuts
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup honey
  • 2 tbsp coconut oil melted or softened
  • 1 egg white

  1. chop up all your nuts finely and throw them into a large bowl.
  2. toss the nuts with the salt and cinnamon until covered.
  3. add in your wet ingredients, ending with the egg white.
  4. combine well.
  5. spread the granola mixture onto a parchment paper-lined baking tray. pat down with a spatula and spread to the edges of the baking sheet.
  6. bake in a preheated oven at 330 for 20 minutes, until golden brown.
  7. allow to cool completely before breaking the granola into chunks.
