a crunchy, sweet, and addictive alternative to both granola and cereal.
This is the best thing ever! I say that about a lot of my recipes, though. But seriously. These coconut flakes are so good, I’m calling it ‘cereal’ instead of granola because I think you should truly use these as a homemade, makeshift cereal. Have a bowl with your favorite nut milk, it’s like a variation of my earth to rose granola you can make in your own home and it’s so damn good!
So yes, while I call this ‘cereal’ it is also technically any sort of snack you like, call it nut-free granola or coconola if you please as well, and although you should definitely try it with milk and/or yogurt, it is completely addictive as a dry snack too. Five cups of coconut flakes may seem like a lot but trust me it’ll disappear quickly.
To make this coconut-based cereal with an apple flavour, I start by infusing two apple with the honey and coconut oil or butter (apparently infusing honey is one of my favourite things to do now!). It makes the honey fragrant and adds a subtle flavour to the coconut flakes. This is also the most “complicated” step of the recipe, apart from simmering the honey with the apples, the recipe requires minimal effort and minimal ingredients! You just need to toss your coconut flakes in a bunch of cinnamon, nutmeg and salt for that perfect cinnamon-y flavour– and the salt undertone is what gives this coconut cereal an added addictive quality if I do say so myself.
I see many variations of these coconut flakes in my future, or perhaps in earth to rose’s. Regardless, I definitely am on a quest to make new ways of ‘cereal’ accessible to all us gut-sensitive or health-conscious folk, whether it involves coconut or otherwise. Of course, any of my granola recipes (most of which do include nuts) could double as cereal ostensibly as well.

apple cinnamon coconut flake cereal: ingredients
- 5 cups coconut flakes
- 1/3 cup honey
- 2 apples, peeled and shredded
- 3 tbsp butter or coconut oil
- 3 tbsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup raisins

- start placing your shredded apple, honey and coconut oil or butter in a medium size saucepan, and heat over medium heat for 10 mins or so, until it begins to bubble. turn down the temperature to a simmer, and simmer for five more mins.
- toss your coconut flakes in the cinnamon, nutmeg and salt in a large bowl.
- once your apple-honey mixture is ready, remove from heat and place in bowl with coconut flakes- be aware it will be hot.
- combine everything, mixing well until all the coconut flakes are well covered.
- spread the coconut across a parchment paper-lined baking tray, and bake in a preheated oven at 330 for 20 minutes.
- remove from oven, and flip/mix the coconut around on the tray, before returning to the oven and baking for another 10-15 minutes.
- remove from heat and allow to cool. add in 1 cup of raisins if desired and mix around. store in an airtight glass jar.
- enjoy these delicious coconut flakes as a dry snack, with yogurt, or with nut milk. works equally well as a smoothie topper!
