It’s my first summer with a baby (currently 6 weeks of age going on 7) and thus the rate of my new recipe output has (clearly) gone down, but nonetheless I have a few summertime treats up my sleeve! And what is more “summertime treat” than a popsicle? I’ve been loving experimenting with all types of homemade popsicles lately too, they’re so satisfying and so easy (win-win) so this will definitely not be the last new popsicle recipe you’ll see here this summer.
This particular popsicle veers on frozen yogurt-esque, with a cheesecake (and blueberry!) flavour thanks to frozen blueberries and dry curd cottage cheese, also known as farmer’s cheese.
The result is a creamy frozen treat that’s littered with specs of blueberries and has a balance of sweetness thanks to the honey and tartness thanks to the blueberries. They freeze perfectly, and make for a healthy dessert option for any summer (or winter!) day, or else the perfect hot-day-snack.
As with most popsicles, this one is a no-brainer recipe: just throw all the ingredients into the blender or food processor until creamy and then pour it all into your popsicle molds. The hardest part is playing the waiting game while these bad boys freeze. Once they’re frozen solid, remove them and store them in individual ziplock bags for ease of access!
