these chicken drumsticks are super simple and easy to make; they are perfect for your weekly meal prep or last-minute dinner idea.

Chicken is my quick and easy go-to. It’s definitely in a constant/never-ending rotation at my house, it tends to be our go-to protein for lunches, on top of the occasional dinner as well. Yet, I never tire of chicken. I have a rotation of spice mixes I create by hand, since being on the SCD diet means that I typically cannot rely on those handy-dandy pre-packaged or store-bought spice mixes. I’ve even got into the habit of prepping the dry rub I have for this whole roasted chicken recipe in a bulk, and shake it all up, put it in a larger glass jar, and just work my way through it as I need– I inevitably end up using this spice mix on more than just chicken, and it’s always nice to have a flavourful spice mix “ready to go.”

That being said, I will probably start doing the same with the below variation. I wanted to share a new, quick and easy, meal prep-friendly chicken recipe, and I figured making them as drumsticks might be the best way to check all those boxes. You can certainly use this spice rub on chicken that’s not drumsticks, too.

This spice rub allows the chicken drumsticks to become perfectly-browned and crispy, with an appropriate fall feeling in the spice line-up, including cardamom, allspice and coriander, among others.

I often make a batch of these on Sundays (or else use the rub on a full chicken), and that way I have chicken drumsticks ready to pop in the oven (or microwave!) and enjoy with salads for weekday lunches– that tends to be my go-to– but you do you, boo.

  • 12 chicken drumsticks, or approx 3-3.5 lbs
  • 1 tbsp of paprika
  • 1 + 1/2 tsp of salt
  • 1 tsp of allspice
  • 1/2 tsp of cardamom
  • 1 tsp of turmeric

  • 1/2 tsp of pepper

  1. start by preparing your spice mix, simply mix all your spices together in a small bowl.

  3. using your spice mix, dry rub the chicken drumsticks all over, covering them as well as possible with the spices, on both sides.
  4. drizzle the extra virgin olive oil across all your chicken drumsticks.
  5. bake in a preheated oven at 375 for 45 minutes, remove from the oven, and flip the drumsticks, roasting for another 15 minutes, until cooked through.
  6. serve with literally any and everything– just about all sides will go with these chicken drumsticks, although i tend to have them with my daily salad. they also are fantastic for meal prep, make them on sunday and reheat and enjoy during the week.

    This was SO good! What’s your daily salad? Cause this would like be great with a salad.

      amazing!! so glad you enjoyed it. my daily salad usually consists of some mix of the following: romaine or spinach, cherry tomatoes, cucumbers, mushrooms, avocado (and one or less veggies depending on what I have in the fridge). I also sometimes add toppings like freshly grated parmesan. My dressing is always fresh squeezed lemon juice, extra virgin olive oil drizzle, salt, pepper and oregano.

        I almost threw that same type of salad together cause I actually have those things, but I was tired and grabbed a shower while the chicken was cooking. Haha. Will definitely do that today with leftovers though. Thank you 🙂
