easy sauteed green cabbage (grain free, refined sugar free, scd diet)

green cabbage is sliced thinly and sautéed in an apple cider vinegar mixture until browned, to create a delicious addition to your meal, whether a side dish or otherwise.

It’s a rare side dish! At least when it comes to me. I tend to gravitate towards sweet treats aka muffins, cakes, cookies, you know…everything dessert. However, every now and then I make something that you can actually eat for dinner (or lunch)! Or in this case, as a part of your dinner! 

This sautéed cabbage is not only super easy, it’s also super versatile. You can make it as is and use it as a side dish to pretty much any meal, or you can get your cook on and turn it into something more – I’ll share a few ideas of how else you can incorporate this yummy caramelized cabbage slices below, so read on.

Okay so first things first, you grab yourself a green cabbage, whether large or small, we got options – if its large, like mine was, simply use half and save the other half for something else (make yourself a coleslaw! Add it to regular salads! Cook it as a wedge!). Then you slice it thinly into these ribbon-like pieces – sidenote – the inspiration for this cabbage definitely came from wellplated.com, you’ll see how I did riff off her original recipe.

Once it’s all sliced up, it’s easy work from here – sautee the cabbage in a large skillet with your spices, and then once it gets browned, add your apple cider vinegar and juice mixture. 

Now, if you wanted to do more than just a cabbage side dish, you could also add some browned ground beef to this dish and make it more of a whole meal, or you could add some of this cabbage to stir-fried rice (that would be amazing), orrrr you could do a stir-fry without rice and add some cubed chicken breast.

  • 1/2 large green cabbage or 1 small green cabbage
  • 2 tbsp butter
  • 1 tbsp extra virgin olive oil
  • 1 tbsp apple cider vinegar

  1. start by chopping up your cabbage thinly, to do this, if you have a large cabbage, simply cut in half through the core. set aside one half for another use. place the cabbage on the cutting board with the core down, and slice into thinly so you have ribbon-like pieces, all around the core until everything is sliced.
  2. now, heat up the butter and extra virgin olive oil in large skillet over medium heat. once melted, add in the cabbage, salt and pepper and thyme and oregano. stir.
  3. sautée for 19 mins, stir only occasionally, allow the cabbage to rest in the pan so that you get the slices nice and browned and caramelized.
  4. after 19 mins, add your sauce by whisking together the apple cider vinegar, apple cider juice and honey in a small dish, before pouring it over the cabbage.
  5. allow to sit for another two mins, or so turning down temperature bit.
  6. remove from heat and serve hot – this works well as a side in and of itself, however it can also be used as an addition to stir-fry rice, or you can even turn this into a main course by adding some ground beef to the mixture, or stir fry with chicken. the options are endless!
