Being on the SCD diet makes it difficult (although not impossible) to find pre-packaged foods I can eat. Bacon happens to be one of them. While I’ve seen people get SCD legal-bacon out there, I haven’t really been able to find it here in Montreal. I admittedly haven’t tried very hard, since figuring out my own version of homemade bacon has pretty much satisfied that itch.
Even all my friends and family, who are your typical nitrate-sugar-filled bacon eaters, have enjoyed my homemade variety more than the former. If only it wasn’t so time-consuming to make. Mainly because I now have to slice the flank pork myself, I used to buy it pre sliced but long story short…not anymore. If you’re able to find the flank pork thinly sliced, that’s ideal and will save you time. Also, it’ll look better…I personally am not the best flank pork slicer.
Otherwise, this recipe is actually quite simple.
The flank pork is prepared with a mix of my usual spices– namely, paprika, and it’s always better when you allow it to soak up the spices overnight. If you have the time, definitely prepare it early and allow it to marinade.
Sometimes I’ll also add honey into the mixture, but I don’t always. You can definitely experiment with the spice line-up though.

- 1 kg flank pork, thinly sliced into bacon-sized strips
- 1 + 1/2 tbsp of paprika
- 1 tsp of salt
- 1/2 tsp of white pepper
- 2 tbsp of extra virgin olive oil

- mix the spices together in a small bowl.
- place sliced flank pork in a large bowl and coat them in the dry rub.
- add the extra virgin olive oil and coat well.
- cover and let sit overnight.
- roast in oven at 350 for 30-50 minutes, flipping half way.
