a delicious an easy to make grain free quiche filled with spinach and pockets of feta cheese.
Ok, so I’ll admit going into making this, I was not necessarily thinking I would be making a quiche. I was thinking spanakopita, and so you’ll notice the filling for this quiche is very much spanakopita-esque. My next recipe will be a full-on spanakopita with a pastry-like topping that goes with it, but today, I am still very much excited and pleased with this spinach feta quiche recipe.
I love making quiche, particularly because it is so freaking easy and it’s fail proof. If you randomly decide (or accidentally, however that might happen) to add an extra egg, an extra veggie, whatever it is, quiche is forgiving, no one will ever be able to tell.
But I don’t just love quiche because I am lazy af and make a ton of mistakes (lol), I love it because it is delicious!! I am a big egg person though. I’ll take eggs any which way, and baked in a pie crust is as good as any (or really a lot better than any). Feta is definitely a treat for me, as I follow the SCD diet for my Crohn’s disease, Feta is considered a “legal” item to eat on occasion. I only tried it for the first time when making this recipe actually, and I am happy to say my stomach has approved of it. So I definitely plan to continue eating it “on occasion.”
For the quiche pie crust, I actually used the cashew pulp I had leftover from making cashew milk (I strained my cashew milk), which I then dried out to turn into cashew meal. So I recommend ground cashews for this recipe, but I think you could also use almond meal or almond flour to similar results (although I have yet to test that).

spinach feta quiche: ingredients
filling
- 1/2 chopped spinach
- 1/2 cup finely chopped red onion
- 1 garlic clove minced
- 2 tbsp extra virgin olive oil
- 4 eggs
- 1/2 cup feta cheese, chopped
- 1/4 tsp dill
- 1 tsp fresh parsley, chopped
- salt and pepper to taste
crust
- 1 cup of cashews, ground up (pulse in food processor until crumbly texture)
- 1 egg
- 1 tbsp of coconut oil
- 1 tsp of fresh oregano, finely chopped
spinach feta quiche: how to
- in a bowl, start by preparing your quiche crust. mix all the crust ingredients together and combine well.
- firmly pat down the crust into a pie dish lined with parchment paper, and bring it up along the edges slightly, until it covers the dish completely.
- bake the crust in a preheated oven at 350 for 15 mins, until lightly golden. if the crust poufs up a bit, it’s fine, you can gently press down when still hot.
- while the crust is baking, prepare the filling. in a large bowl, add all your ingredients, except for the feta and spinach, and combine well.
- once the egg mixture is well combined, add in the chopped spinach and feta and gently fold together.
- pour the mixture into the pre-baked pie crust, and return to the quiche to the oven to bake for another 30-35 minutes.
- serve warm or cold. also freezes very well!
