I didn’t eat any chocolate for a good 5 (? or more) years when I was strict SCD. However, I did introduce pure cacao into my diet maybe two years ago, and I did experiment with a few recipes that contained cacao at the time, but since then, I’ve taken it a step further with dark chocolate that’s refined sugar free (shout out Hu for making such a thing). It pretty much started during my pregnancy and I haven’t given up on it yet. 

When I was strict SCD, I didn’t find myself “missing” chocolate per se, but perhaps now that my hormones are awry (postpartum) or perhaps just because I’ve been eating it, I’ve really found myself back to the more normal/standard human behavior of loving/craving chocolate. And chocolate treats especially. I don’t do storebought ones though, so I’ve been making a variety of homemade chocolate treats, and this is my latest and favourite-est!

So this is my version of a peanut butter cup. It’s got a medjool date for the base, a layer of peanut butter — I actually used crunchy peanut butter, but you’re adding in extra roasted peanuts after that so it’s all good if you opt for smooth, you’re getting that crunch regardless. Topped with melted refined sugar free dark chocolate, and a few more chopped roasted peanuts for good measure. It’s fail-proof, no-bake, lives in the freezers, highly snackable and easy to share since they’re individual. 

I was definitely inspired by the viral date bark, which I also made on my Instagram, and while I absolutely loved it, my main issue with that is how messy it is to break apart/share – I love that these little peanut butter cups are in their own little parchment paper cups and you can easily hand one to a friend/family member (I had a few family members try these and they all loved them).

  • 6 medjool dates
  • 1/2 cup + 2 tbsp chopped roasted peanuts
  • 1/2 cup + 1 tbsp refined sugar free dark chocolate chips, melted i use hu kitchen dark chocolate gems
  • 1/4 cup peanut butter (give or take)

  1. in a mini muffin pan, place mini muffin parchment paper cups.
  2. take your medjool dates and slice each in half as cleanly as possible, removing the pit.
  3. open up one half of a medjool date and flatten it a bit before placing it inside the parchment paper cup, rounding out the bottom of the cup as much as possible. repeat with all 6 medjool dates (12 halves total).
  4. add a spoonful of peanut butter to the top of each medjool date.
  5. add chopped roasted peanuts to the top of each date, pressing down on each. feel free to add as much as you like.
  6. you can melt your chocolate chips in a microwave-safe bowl at 30-40 second intervals, stirring in between, until fully melted.
  7. spoon your melted chocolate on top of each cup, allowing it to cover the entire top.
  8. top off each peanut butter cup with some more roasted peanuts.
  9. place in freezer, allow to freeze for at least 2 hours. store in freezer and serve frozen/cold!
