this apple cake is not only beautiful, it’s so flavourful with hints of cinnamon and honey, and finished with a toasted apple-pecan topping.
I made this apple cake originally for Rosh Hashanah, the Jewish holiday celebrating the New Year. Apples are a traditional food to eat on Rosh Hashanah, you have them alongside honey to signify a sweet new year. Still, this apple cake makes a sweet dessert item year round, but I know it’ll definitely make a return appearance at Rosh Hashanah again this year. It is SCD diet legal, which means it contains honey. It’s the perfect combination of apples and honey, with cinnamon to compliment it all.
The cake recipe uses coconut flour, with chunks of apple sprinkled through out. It’s topped off with a special mix of sautéed and caramelized apples and pecans, making the cake that much prettier too.

- 1/2 cup of coconut flour
- 1/2 cup of honey
- 1/2 cup of coconut oil, melted
- 5 eggs
- 1 tsp of baking soda
- 1 tsp of cinnamon
- 1/2 tsp of pure vanilla extract
- 1/2 tsp of apple cider vinegar
- 1 apple, peeled and chopped into pieces

- 1 apple, peeled and thinly sliced
- 1/3 cup of pecans
- 1/2 tsp of cinnamon
- 1 tbsp of grapeseed oil

apple cake
- using a food processor, add the coconut flour, cinnamon, baking soda, and salt, and mix well.
- mix in the honey, coconut oil, vanilla extract, apple cider vinegar and eggs until well combined, it’ll be a fluffy type of texture.
- remove the blade from the food processor and mix in the chopped apple pieces
- pour batter into a loaf baking dish, greased or lined with parchment paper. Bake at 350 for approx 40-45 mins, a toothpick should come out relatively clean! allow to cool before attempting to remove from the pan or cutting.
apple cake topping
- melt a tbsp of grapeseed oil in a cast iron pan over medium heat. while it gets hot, mix your apple slices with the pecans and toss them in the cinnamon.
- sautée the pecans and apples for ten mins or so, until apples and pecans are caramelized, and remove from heat.
- allow to cool before chopping up the pecans into little pieces. place the slices of apples flat across the top of the fully-cooked loaf and sprinkle the chopped pecans across it. Ready to serve!
