these apple cinnamon muffins are made with coconut flour and applesauce, with the option to add-in currants or raisins for the perfect baked treat.
Another amazing muffin to add to my muffin repertoire, as I am definitely racking one up at this point! These ones were a creation that happened quite early on in my SCD Diet journey, as I experimented with ingredients to figure out what creates the perfect mixture for the perfect muffin texture. It’s all about that texture. I figured out it out with this recipe, that’s for sure.
These muffins are supremely apple-flavoured, thanks to the inclusion of applesauce as well as apple chunks, because what is an apple muffin without little bits of apple? It is garbage, that’s what. Also, what is an apple muffin without loads of cinnamon? Also garbage. Hence this muffin has both apple chunks AND cinnamon thus 100% ensuring it is NOT garbage, but rather, the most delicious apple muffin you will ever eat, gluten or otherwise.
It’s an extremely confident claim which I plan on upholding when you try out the recipe below.
This is not my first foray into apple-flavoured anything, for that matter. I am the Apple Connoisseur, some might say. I am the Queen of Apples, indeed, others might say. Yet, elsewhere people may refer to me as the Apple Expert. I go by many names. I also go by Rose. And @grainfreee. So, you know. I wear many hats.
But the hat I prefer the most, must be my Apple Hat. Or my Muffin Hat. Or my Apple Muffin Hat. It’s honestly hard to choose, I love all my hats. I don’t know what I am saying anymore.
Well, all that being said (whatever it is that I said, you may be just as confused as I at this point), I truly do love my apples, all sorts. I’ve been meaning to do a Top 5 Best Apples of all Time list but it’s just been taking me longer than I’ve expected to try all the apple varieties I’ve needed to test but just know: IT’S COMING SOON.
Ahead of that, I am sharing these apple cinnamon muffins that are grain free and gluten free (duh!!) below. If you like all things apple and all things muffins, I encourage you to also check out these apple chai muffins, which are equally delicious!
grain free apple cinnamon muffins: ingredients
- 1/2 cup of coconut flour
- 1/4 cup of applesauce
- 1/2 cup of honey
- 1/2 cup of coconut oil
- 5 eggs
- 2 tbsp of SCD yogurt
- 1/2 tsp of baking soda
- 1 tsp of apple cider vinegar
- 1 tbsp of cinnamon
- 1/8 tsp of ginger
- 1 apple, peeled and diced into small pieces
- 1/2 cup of currants or raisins (optional add-in)
grain free apple cinnamon muffins: how to
- in a bowl, begin with mixing the dry ingredients together, then combine the wet ingredients until well combined. add in the peeled, diced chunks of apple at the end. (additional optional add-ins: raisins or currants, about 1/2 cup is so good!)
- pour the batter into parchment paper-cup lined baking trays.
- bake at 350 for 25 minutes. remove from oven and allow to cool. stores well in fridge & freezer. makes approx 9-10 muffins.
apple cinnamon (currant) muffins
Ingredients
- 1/2 cup coconut four
- 1/4 cup applesauce
- 2 tbsp yogurt SCD legal
- 1/2 cup honey
- 1/2 cup coconut oil sub in grape seed oil, melted butter or ghee butter
- 5 eggs
- 1/2 tsp baking soda
- 1 tsp apple cider vinegar
- 1 tbsp cinnamon
- 1/8 tsp ginger
- 1 apple, peeled and diced into small pieces
- 1/2 cup currants or raisins optional
Instructions
- in a medium to large bowl, begin with mixing the dry ingredients together, starting with the coconut flour, baking soda, and spices.
- then add in the wet ingredients, except for the peeled and diced apple, until well combined, ending with the eggs. once the eggs are well mixed in, fold in the chunks of apples and currants or raisins if desired.
- pour the batter into parchment paper-cup lined baking trays, approximately 3/4 of the way full.
- bake in a preheated oven at 350 for 25 minutes. remove from oven and allow to cool. these muffins store well in fridge & freezer, and can be reheated slightly in the oven for best results when enjoying!
Can we sub the yogurt?
hi trisha! for the yogurt, the main sub i would recommend would be with dry curd cottage cheese or farmer’s cheese. that would probably be best!
