It may be winter at the moment, but when you’re craving fudgesicles, you make fudgesicles. I’ve been dabbling more and more in the popsicle and ice cream realm, dairy free and refined sugar free style of course, and I’ve been loving what I’ve created so far. When it comes to homemade ice cream, I am still experimenting and trying out other people’s recipes – I have the Kitchen Aid stand mixer ice cream attachment and have loved the results so far – this recipe from JoyFoodSunshine is absolutely fantastic and it’s actually fully SCD as is (!).

Anyways, as for my own recipes – I have ideas for what type of ice cream recipe I’d like to create but it’s taking awhile to get it done. In the meantime, popsicles are holding me over! Enter: fudgesicles!

These fudgesicles contain cacao powder, which is not considered SCD, so they are one of the non-SCD recipes on my site. Nonetheless, some consider cacao modified SCD, or the type of ingredient one can indulge in every so often – I’ve only recently really added it to my repertoire more consistently (case in point, chocolate mousse that’s amazinggg).

The one thing I love about popsicles (over ice cream, if we’re being honest) is just how damn easy they are to make. For this recipe, you only need a four (!) ingredients – coconut milk, cacao powder, honey and vanilla extract – and it comes together so quickly, in a food processor or blender (no need to dirty anything else). The hardest part is actually waiting for these bad boys to fully freeze so you can indulge. Once they are frozen, they make for a creamy, rich treat, summer or winter.

  • 1 can of coconut milk
  • 1/3  cup honey (feel free to use slightly more or less depending on desired sweetness – you can taste test the mixture before freezing!)
  • 1/3  cup cacao powder
  • 1/2 tsp pure vanilla extract

  1. throw all your ingredients together in a food processor or blender, and blend until completely smooth and combined.
  2. pour your mixture into popsicle molds – i love these ones from amazon.
  3. place your popsicle molds safely in the freezer and allow to freeze for 12 hours or more, until completely solid.
  4. carefully remove from the molds and store in individual baggies or ziploc bags. enjoy a frozen treat!
