these perfectly juicy and crispy chicken thighs are seasoned with a salt and pepper-inspired dry rub and served with an easy homemade honey mustard dressing.

This recipe has quickly become an essential and I love it! It all started one unsuspecting afternoon when I had some chicken wings and for whatever reason (maybe I needed to do groceries, I really don’t know) I decided to opt for a very basic salt and pepper dry rub. I had never made anything strictly salt and pepper-based in the past, but of course I know it’s a “thing” so I tried it out, and I thought it was delicious. (All that to say, I will definitely have a classic salt and pepper wing recipe for you all soon too lolol). 

Anyways that’s how it started — but this is how it’s going (*meme voice*). As I continued to explore with the salt and pepper base for a dry rub, I ended up adding in a couple of extra spices to round things out, hence this dry rub does also contain dried oregano, white pepper (so good!), and paprika (minimally).

Not just that though, but I added a honey mustard sauce that you can either drizzle (or slather, you do you, boo) across all the thighs prior to serving for an added sweetness to contrast the saltiness, orrrr you can simply serve it with the thighs, and allow each person to add honey mustard to their chicken as they desire– dip away. It’s also fantastic with a big salad on the side, especially when you add the honey mustard into the mix, because it inevitably gets mixed in with your salad so you end up with a sort of salad dressing thing happening too. If salad isn’t your thing though, I do have two other side recommendations below in the recipe.

I’ll keep it short and sweet, that’s all you need to know. I love to bake chicken thighs in the oven (with skin on of course) because they get extra crispy and they stay juicy, they are so good– your whole family will enjoy these.

salt & pepper chicken thighs

  • 9 skin-on, bone-in chicken thighs
  • 4 tsp salt
  • 2 tsp black pepper
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp white pepper
  • 2 cloves of garlic, finely chopped (optional)
  • 3-4 tbsp extra virgin olive oil

  • 1/3 cup honey
  • 2 tsp dijon mustard

  1. start by preparing your spice rub; mix all the spices together.
  2. place your chicken thighs on a large baking sheet lined with parchment paper, and pat them dry with a piece of paper towel.
  3. now using your hands rub the spices generously across the top and bottom of each chicken thigh.
  4. sprinkle the garlic across each thigh so some bits of garlic sits atop each one.
  5. drizzle each thigh with extra virgin olive oil.
  6. bake in a preheated oven at 400 for 40 minutes. remove from oven and spoon the pan drippings back on top of each thigh. return to oven and bake for another 10-15 minutes.
  7. while the thighs are roasting, prepare your honey mustard to serve with. in a small bowl, mix 1/3 cup of honey with 2 tsp of dijon mustard until well combined and set aside.
  8. once the thighs are cooked fully, remove from oven and serve with the honey mustard for dipping, or else you can drizzle it across the thighs generously prior to serving.
  9. recommended sides to serve with: salad is my go-to, but you can always do roasted cauliflower and brussels sprouts.
